Sullivans Cove French Oak HH0379 is a single cask Tasmanian single malt whisky from the distillery’s early French oak era. This release comes from a time when French oak ex-tawny casks could still be described as port-style casks.

The distillery distilled this whisky on 30 July 2000. It matured for more than 14 years in a 300-litre French oak ex-tawny cask. Sullivans Cove bottled it on 4 February 2015 at 47.5% ABV. Barrel HH0379 produced only 484 bottles in total.

This release belongs to the Highland Holdings era, before Patrick Maguire acquired the distillery. Many collectors value this period because it helped define the French oak style that later brought Sullivans Cove international attention.

French oak ex-tawny casks play a key role in this whisky’s character. They add rich notes of chocolate, dried fruit and firm oak.
